Aged Rum With Wind In The Sails

This aged rum is transported from the Dominican Republic to Europe by sailing ship when it is finished – completely without engine power. The bottles are lightweight, made partially from recycled glass and produced in Europe to reduce CO2 emissions. The label is printed on recycled paper and the cork is produced without the use of glue.

At A Clean Spirit, we have placed the production of our rum in extremely knowledgeable hands.

It is distilled at one of the world’s most modern and sustainable distilleries, located in the Dominican Republic. The distillery has maximum focus on environment. CO₂ from the fermentation process is collected in pressure tanks, which are used for soda production .

While the rum is being casked for aging, the vinasse is sprayed back on the fields as a natural fertilizer, and the biomass is used as fuel to create energy.

The distillery is known for its good staff relations. As a workplace, it also demonstrates social responsibility by, among other things, to ensure that poor school children from the surrounding areas are taken to and from school in buses every day.

With many years of experience from the sugarcane field, we know which notes to look for when choosing how to age Ron Sostenible rum. 

Pairing the esters with new flavours  from casks of other, rich and renowned spirits is essential in innovating and enriching the taste notes of an aged rum. Wether the cask has been filled on legendary distilleries, has a unique flavour profile from another spirit or has been transported on old sailing ship, you can taste its journey and history.

With the selection of cask, an interesting story is added while aging the rum: the production and heritage of the former spirit that was aged in the cask. Tokaji wine casks from Hungary, bourbon casks from premium whiskeys or oloroso casks emanating palomino-grapes all compliment the rum with their distinct tasting notes.

Rum aging in general

After distillation most rums are aged. Aging is when the rum rests in barrels for extended periods of time to enhance the ester-tastes and add new notes of flavour.

Barrel type: New oak barrels impart more flavor quickly, while used barrels often ex-bourbon barrels give a softer flavor. Barrels previously used for ie. olorosso and tokaji have also been known to enrich the rum flavour significantly.

Time: Aging can last from just a few months to many decades. During this time, the rum interacts with the wood, absorbing flavors and colors. The wood softens the harshness of the alcohol, adds notes of vanilla, caramel, spice, and toast, and makes the rum smoother.

Climate: The warm, humid climate of the Caribbean speeds up the aging process significantly compared to cooler climates. A rum aged for five years in the Caribbean might show characteristics of a much older spirit aged in Scotland, for example.

Color: The deep amber or golden color of most aged rums comes from the barrel. However, some darker rums might have caramel coloring added. White rums are either unaged or filtered after aging to remove the color.
